I discovered these awesome black bean brownies floating around the internet one day and just had to try them.
This recipe comes from www.theminimilistbaker.com and they are very delicious. Dare I say better than regular ones? I’ll even admit to letting my kids have 3 in a row. All those black beans are awesome protein! And it’s much better than digesting a bunch of gluten and flour.
These are even vegan. If you’ve never tried a “flax egg” before, I encourage you to do so. The whole purpose of an egg is the act as a binder so when you dilute flax seeds in water, it provides the same purpose and makes a great egg substitute. But of course if you are just dying to make these and only have eggs, go for it.
I even served them up with a nice glass of coconut milk.
These come our moist, gooey and great. I hope you enjoy them as much as my family did.
